This is another variation of Jollof rice as we continue our culinary journey through West Africa. It’s also prepared by the Gambian Chef, “Abdoulie”. As a reminder, Jollof rice is a popular one-pot rice dish, also known as Benachin (meaning “one pot” in the Wolof language) and is widely eaten in many variations across the whole of West Africa.
